Everybody has a favourite cake recipe and there are so many to choose from. When you’re planning on having a tea and coffee date with your significant other or with your best friends, a zesty orange and syrup cake will do the trick as a snack. It’s a simple cake recipe with some orange goodness and a homemade orange syrup to add to the flavour. A great cup of tea is often served with lemon or citrus-flavoured cakes and cookies.

You’ve probably already got all of the ingredients at home and this buttery and light cake batter is so simple to put together. You can even turn it into a lemon cake instead of oranges. The buttery syrup is going to add some sweetness and moisten up the cake even more, making each bite better. To serve, turn the kettle on, make a hot cup of coffee or tea and you can add a big dollop of whipped cream and maybe even a grating of zest.

A moist and delicious sponge cake drizzled with a zesty orange syrup.

Ingredients – CaKE

  • 3 3 eggs

  • 1 cup 1 sugar

  • 1 1⁄2 cups 1 1⁄2 flour

  • 1 1⁄2 cups 1 1⁄2 baking flour

  • 3 tbsp 3 butter

  • 3⁄4 cup 3⁄4 milk

  • For the syrup
  • 1 cup 1 water

  • 1 1⁄2 cups 1 1⁄2 sugar

  • 1 tbsp 1 butter

  • 1 cup 1 fresh orange juice

Method

  • Preheat oven to 170°C.
  • Cream the butter and eggs together.
  • Add the dry ingredients.
  • Melt the milk and butter together, then add to the mixture.
  • Pour into a greased pastry dish.
  • Bake for 30 min at 170°C.
  • For the syrup
  • In a saucepan, boil the ingredients together. Pour over the hot cake.
  • Dust with icing sugar then cut into blocks and serve with fresh cream.
